So today I have an absolutely dreamy recipe to share with you guys, my own creation I've dubbed: Strawberries and Coconut Dreams. It's a decadent albeit healthy(er) chia seed pudding which is perfect for breakfast or as a desert. It's vegan friendly, gluten free and can be made sugar free too. Read on to find out how to make this luscious layery glass of goodness.
Chia seed pudding methond (first layer)The first layer is a bog standard chia seed pudding, which I made with coconut milk, although any type of milk will do. I used about 40 grams ishhh (I totally winged it haha) of chia seeds and enough milk to engulf them, a dash of vanilla extract and a tablespoon of coconut sugar. Make two servings of this, with the second being used for the strawberry compote layer. refrigerate for 4 hours or overnight if possible.
I used the Blue Dragon coconut cream, which I whisked for about 2 mins to increase thickness, although this is optional as it's quite thick anyway, it all depends on your personal preference. This step can be done after the chia seed pudding has set, and right before you begin to layer.
Strawberry compote chia seed pudding
I used a handful and a half to two handfuls of fresh strawberries, and boiled them in a pan of water until it turned into a sauce like compote. I then added it to the chia seed pudding already made and mixed it all together. Leave to set for 4 hours or overnight in the fridge,
Start with the plain vanilla chia seed pudding. Then cut some strawberries in half using as many as needed for your jar or glass, and layer it around as seen in the above photos. Put the coconut cream on to the chia seed pudding, and around the strawberries. Follow with the strawberry compote chia seed pudding and then some more coconut cream. Garnish with fresh strawberries and dessicated coconut and Voila, there you have it, your very own Strawberries and Coconut Dreams.
